Summer does not seem to be nearing her end, which is fine for us Floridians as we have our beautiful beaches and salt water pools to regale and enjoy wonderful dishes like these! Couple with a few margaritas and fresh corn tortilla chips, this is the perfect pool-side snack or serve as a side to our Chili Lime Grilled Chicken. We hope you have some of our Key Lime Olive Oil on hand for this delicious blend of sweet corn, tangy onion, spicy jalapeño and the fresh flavor of Oviedo Olive Oil Key Lime Olive Oil. All of the ingredients are items that are pantry ready and allow you to make this a wonderful dip, side dish, relish or dressing for tacos.

Our idea is to keep it simple, keep it easy, and create flavorful food. Corn salsa is great for those who have an aversion to tomatoes or the tart citrus flavor or even the histamine response from a standard tomato based salsa.

2 tbsp pickled jalapeño, diced
½ cup red onion, diced
¼ cup cilantro, chopped
3 cups sweet yellow corn (canned okay)
½ tsp Oviedo Olive Oil Lime Fresco Sea Salt or regular salt
½ tsp pepper
2 tbsp Oviedo Olive Oil Key Lime Olive Oil
1 tbsp lime zest
2 tbsp lime juice (lemon juice also works)
Chop jalapeño, onion and cilantro into fine pieces, place in a large bowl. Add corn. Stir in spices, olive oil and lime juice/zest until combined. Serve with chips or as a side to chicken or tacos.
