Recipe Of The Month
My Grandmother was a phenomenal cook. She knew her way around the kitchen like a French Chef and I earned my way into her hall of fame when I wowed her one Christmas with my homemade Pecan Pie. Mouth agape, she humbly admitted mine was better than hers; it was then I knew I had made it as a self-taught chef. Thank you Julia Child for being on PBS when I was a little girl as I watched you intently and was a vehement student of all things food. This recipe is a hat tip and nod to my grandmother’s classic recipe but with our olive oil spin. Bon Appétit!
- 1 Cup Oviedo Olive Oil Butter Infused EVOO
- 1/2 Cup Sour Cream or Greek Yogurt
- 3 Egg Yolks
- 1 Tbsp Lemon Juice (or more to taste)
- pinch of paprika (if desired)
In a double boiler, add Butter Olive Oil and slowly heat, adding sour cream using a whisk to blend together. Slowly whip in lemon juice and then add in the egg yolks so as not to over beat. Continue to whisk until well blended and creamy, add paprika if desired. Spoon over poached eggs served atop toasted English muffins adorned with smoked salmon.
